Every since I was a little girl, I loved this dish. I always thought it was so hard to make until a couple of years ago. Now every chance I get to make it, I do. Hope you enjoy!
2lbs. stew meat
2 onions, chopped
1 tablespoon turmeric
5 cups parsley, chopped
1 cup chives, chopped
1/4 cup fresh fenugreek or 2 tablespoon dried
4 dried lemons
4 cups water
1 can kidney beans
Saute meat & onions in olive oil until meat is cooked. Add turmeric, water and dried lemons. Put everything in crock pot.
In another pan, saute the parsley, fenugreek & chives in olive oil til they are kind of burnt. Put the greens in the crock pot with the meat, add salt & pepper to taste. Cook on low for 5-6 hours. In the last 1/2 hour add the drained can of kidney beans. Serve with rice or by itself! Caution: the house may smell very fragrant for a couple of days :)

Meatloaf
Meatloaf - an all time favorite.
1 lb. ground grassfed beef
1/2 zucchini cuts into chunks
1 cup shredded carrots
2 cloves garlic
1/2 white onion cut into chunks
3 oz. tomato paste
1 egg
2 tablespoon dried parsley flakes
1/4 teaspoon salt
In a large bowl put the ground beef. In a food processor, combine the zucchini, carrots, onions and garlic and pulse a couple of times until everything becomes finely chopped but NOT pureed! Put the veggie mixture into the bowl with the ground beef and add the egg, tomato paste, dried parsley and salt and mix well with your hands.
After everything is mixed, shape the meat into a log or loaf and put in a 8 x 8 pyrex. Bake at 350 degrees for 1hr 15mins.
I will be serving mine with some roasted sweet potatoes and salad!

"Kitchen Sink" Frittata
Breakfast is one of my favorite meals. I must say I do get bored of eating the same ol hard boiled or poached eggs. So today I thought I should change it up a bit. I made a frittata with whatever I had in the refrigerator.
1/2 jalapeno chopped
1/2 white onion chopped
1 small sweet potato chopped
6 slices canadian bacon chopped
4 mushrooms chopped
2 slices roasted bellpeppers (from Trader Joe's) chopped
6 eggs
2 slices cooked bacon crumbled
Saute the onion and sweet potato in butter until the onions become translucent and potatoes a little soft. Add in the mushrooms, jalapenos, bellpeppers and canadian bacon and cook for about 3 mins mixing frequently.
Crack the eggs into the pan spacing them out. Add the bacon and put the lid on the pan and lower the heat. Let it cook on low for about 10 mins., take the lid off and make sure the eggs are not runny. Sprinkle with chesse if you wish and enjoy!

Chicken Stefanatorre
This is my version of chicken cacciatore. It is quick & easy to make, yet very healthy.
3 boneless skinless chicken breasts (boiled)
1 small onion - diced or chopped
6 large mushrooms - sliced
6 artichoke hearts, sliced - (canned not marinated)
2 cups of your favorite spaghtetti sauce - ( I used crushed tomatoes from Trader Joe's since they are gluten free)
olive oil
Cube the chicken and put it in a pyrex (or any other kind of dish that can be put in the oven). Saute the onions & mushrooms in olive oil until they are pretty soft. Add them to the chicken dish along with the artichoke hearts and sauce. Give it a quick toss, and if you like add some mozzarella cheese to the top (not shown in the picture since I don't eat dairy). Bake in a 350 degree oven for about 25 mins or until the sauce starts to bubble. Enjoy!

Steak & Veggies
Want a quick and easy dinner but don't know what to make? Sounds like me on a daily basis.
Marinate (2) Ribeye steaks with some salt, pepper, garlic powder, rosemary & olive oil. Let sit for atleast an hour. Then make some roasted veggies. Blanch some brussel sprouts, green beans & carrots for about 3 mins., then transfer them to a pyrex and drizzle with olive oil, salt, pepper and a couple of cloves of fresh garlic. Grill the steaks to perfection and put the veggies in a 350 degree preheated oven for about 30 mins.
Enjoy!
