bacon wrapped dates & jalapenos!

This is one of my all time favorite appetizers! The sweetness of the dates along with the saltiness of the bacon and cheese & the spiciness of the jalapeno with the saltiness of the bacon and cheese!
So fast and simple. I normally make 2 of each per person, so you can make as many or few as you like!!

8 dates - pitted
8 jalapenos - with the seeds removed
6 slices of bacon, cut into 3 ( I use the nitrate free Applewood one from Trader Joe's)
Parmesan cheese cut into chunks (you can use any kind you like but I like parmesan)

Preheat the oven to 350.

Remove the seeds from the jalapeno by putting a slit on the longside of it and carefully scrapping out the seeds. Stuff with cheese and wrap bacon around it securing with a toothpick. Place on baking sheet.

Put a slit on the longside of the date, stuff with cheese and wrap bacon around it securing with a toothpick. Place on the same baking sheet as jalapeno's.

Bake for about 25-30mins. until the bacon gets crispy!! Warning - sometimes the jalapenos can be SPICY!

In a 8x8 pyrex, begin to layer. Apply a very thin layer of the ground beef sauce then layer zucchini, ground beef sauce, cheese (if you are using it) and repeat the layers one more time. On the last layer, place the artichoke hearts.  Bake on 350 for 20 minutes.

"Kitchen Sink" Frittata

Breakfast is one of my favorite meals. I must say I do get bored of eating the same ol hard boiled or poached eggs. So today I thought I should change it up a bit. I made a frittata with whatever I had in the refrigerator.
1/2 jalapeno chopped
1/2 white onion chopped
1 small sweet potato chopped
6 slices canadian bacon chopped
4 mushrooms chopped
2 slices roasted bellpeppers (from Trader Joe's) chopped
6 eggs
2 slices cooked bacon crumbled

Saute the onion and sweet potato in butter until the onions become translucent and potatoes a little soft. Add in the mushrooms, jalapenos, bellpeppers and canadian bacon and cook for about 3 mins mixing frequently.
Crack the eggs into the pan spacing them out. Add the bacon and put the lid on the pan and lower the heat. Let it cook on low for about 10 mins., take the lid off and make sure the eggs are not runny. Sprinkle with chesse if you wish and enjoy!

everything sauteed before adding the eggs!

after eggs have been added and cooked.

Chicken Stefanatorre

This is my version of chicken cacciatore. It is quick & easy to make, yet very healthy.

3 boneless skinless chicken breasts (boiled)
1 small onion - diced or chopped
6 large mushrooms - sliced
6 artichoke hearts, sliced - (canned not marinated)
2 cups of your favorite spaghtetti sauce - ( I used crushed tomatoes from Trader Joe's since they are gluten free)
olive oil

Cube the chicken and put it in a pyrex (or any other kind of dish that can be put in the oven). Saute the onions & mushrooms in olive oil until they are pretty soft. Add them to the chicken dish along with the artichoke hearts and sauce. Give it a quick toss, and if you like add some mozzarella cheese to the top (not shown in the picture since I don't eat dairy). Bake in a 350 degree oven for about 25 mins or until the sauce starts to bubble. Enjoy!

Marinate (2) Ribeye steaks with some salt, pepper, garlic powder, rosemary & olive oil. Let sit for atleast an hour. Then make some roasted veggies. Blanch some brussel sprouts, green beans & carrots for about 3 mins., then transfer them to a pyrex and drizzle with olive oil, salt, pepper and a couple of cloves of fresh garlic. Grill the steaks to perfection and put the veggies in a 350 degree preheated oven for about 30 mins.
